 ½ white cabbage, shredded
 1 red onion, thinly sliced
 2 apples, cut into matchsticks
 2 tbsp apple cider vinegar
 2 tbsp extra virgin olive oil
 2 tsp honey
 flat leaf parsley, roughly chopped

1. Mix the chopped cabbage, onion, apple and parsley in a large mixing bowl.

2. Combine the wet ingredients and pour into the mixing bowl, stirring to evenly coat with the dressing.

3. Season with sea salt and freshly ground black pepper.
